Ingredients:

Chicken cut into 8 pieces or boneless breasts
1/4 cup olive oil
1/4 cup grated Parmesan or Asiago cheese
2 TBS oregano, minced
2 garlic cloves, minced
Salt and freshly ground pepper to taste
1 cup chicken broth
1/2 cup balsamic vinegar
2 TBS cold butter

Preheat oven to 400 degrees. In a large bowl, toss the chicken pieces with the olive oil, cheese, oregano and garlic. Arrange the chicken pieces on a large rimmed baking sheet and season with salt and pepper. Bake chicken breasts about 25 minutes (or chicken pieces with bone, about 45 minutes). Turn once during cooking time.

In a small saucepan, combine the chicken stock and vinegar and boil over high heat until reduced to 1/3 cup (10-15 minutes). Remove from the heat and whisk in the butter, 1 TBS at a time, until smooth. Season to taste and spoon over chicken to serve.
