Ingredients:

1 medium red onion, finely chopped
1 TBS olive oil
4 oz Scottish smoked salmon, finely chopped
8 oz cream cheese, room temperature
3 TBS fresh dill, finely chopped
Additional dill for garnish

In a small pan over low heat, cook onion until until softened, but not brown. Combine onion and cream cheese and mix thoroughly. Gently fold in chopped salmon and dill. Mold into desired shape, cover with plastic wrap and refrigerate 2-4 hours, or overnight. Garnish with dill and serve with toasted bagels or crackers. 10 servings.
